sticky toffee apple cookies

RECIPE

Ingredients:

  • 2 whole-eating apples, finely grated with skin on 

  • 1-2 dates (i used Medjool) soaked in a little warm water (omit for young children)

  • 2-3 tbsp smooth peanut butter 

  • 1 tsp cinnamon

  • 1tsp flaxseed (optional) 

  • 150g rolled oats 

Method

  1. If you're using a conventional oven, preheat to 180ยฐc.

  2. If using dates, start by removing any seeds and placing in a bowl with 50mls warm water and leave to soak.

  3. Finely grate your apples including the skin and place them in a bowl with any juice generated in the process.

  4. Once your dates are soft, very finely chop or blitz to a paste using a food processor or blender.

  5. Add your cinnamon, flaxseed, peanut butter, oats and date/date paste to your bowl and combine (I find hands work best, and great if youโ€™re getting kids involved).

  6. Roll into eight balls and flatten slightly, ready to bake.  If using an air fryer, cook for 8 minutes at 180*C on air fryer mode.  If baking in an oven, add to your preheated oven for 12-15 minutes.
