sticky toffee apple cookies
RECIPE
Ingredients:
2 whole-eating apples, finely grated with skin on
1-2 dates (i used Medjool) soaked in a little warm water (omit for young children)
2-3 tbsp smooth peanut butter
1 tsp cinnamon
1tsp flaxseed (optional)
150g rolled oats
Method
If you're using a conventional oven, preheat to 180ยฐc.
If using dates, start by removing any seeds and placing in a bowl with 50mls warm water and leave to soak.
Finely grate your apples including the skin and place them in a bowl with any juice generated in the process.
Once your dates are soft, very finely chop or blitz to a paste using a food processor or blender.
Add your cinnamon, flaxseed, peanut butter, oats and date/date paste to your bowl and combine (I find hands work best, and great if youโre getting kids involved).
Roll into eight balls and flatten slightly, ready to bake. If using an air fryer, cook for 8 minutes at 180*C on air fryer mode. If baking in an oven, add to your preheated oven for 12-15 minutes.
